The Importance of Hats For Chefs
Known initially as Toque Blanche, meaning white hat, the chef’s hat is the most distinguishable element of the career, the image and the outfit. The tradition was the taller the chef’s hat, the more senior they were in the kitchen, and the number of plaits on the hat referred to the number of recipes they had mastered or the number of ways in which you can prepare an egg – it depends on who you ask. Today, chef’s hats look remarkably different, but they are still essential. Here’s why:
- Food safety laws all over the world states that protective gear should be worn by professional chefs to provide a hygienic service. Providing food prepared in a safe environment is of utmost importance at all times. Chef’s hats prevent hair from falling into food and ensure hair is kept back for ease of movement and focus.
- A uniform consisting of pants, a chef’s jacket, proper footwear and a chef’s cap provides a sense and look of professionalism to the teams and ensures each individual’s clothing is protected during food prep. A white uniform also symbolises cleanliness.
- ‘If you can’t stand the heat, get out of the kitchen’. This saying rings true, as any kitchen can become an uncomfortable place due to various ovens and hobs. The correct uniform, hat included, promotes breathability and movement.
Little Known Facts About a Chef’s Hat
Whether white or the more recent addition to the range – black, the chef’s hat comes with an interesting history. Many chefs nowadays prefer to wear a head covering that is less extravagant, like a hat, skull cap or bandana. This is primarily determined by the restaurant or institution and its essence.
- It is said that if a chef’s hat had 100 pleats, they are a master, as it refers to the 100 ways in which an egg can be cooked.
- Marie-Antoine Carême, the chef to Lord Stewart, the English Ambassador to Vienna between 1814 and 1823, is credited with introducing the now well-known chef’s hat. He put a piece of round cardboard inside to keep it upright.
- Baronial cooking during the middle ages consisted of big pieces of meat cooked on an open fire. Cooks spent long hours stoking the fire. This resulted in ash on their hats, and black was decided on to be a suitable colour for them.
